Beetroot Spread with Hatcho Miso

Ingredients (serves 3 ):
1 pack boiled beetroot. 1 tablespoon ground lemon zest. 1 teaspoon peanut butter. 1 teaspoon MIMASA’s hatcho miso. 1 teaspoon MIMASA’s umeboshi paste.
Chop beetroot. Boil it for 5 minutes with some water. Drain that water and save it. Mash with the rest of the ingredients and some of the water saved until the desired consistency is reached. Season more, if necessary. Recipe courtesy of Montse Bradford
